green horse wheatgrass farm

one of my biggest customers is telling me that they will only buy hydroponicly grown wheatgrass. Ive been growing in compost for 10 years. Its hard to teach an old dog new tricks.
I would like to continue growing in 17"x 17" trays.The one grower that I know that is growing hydroponicly in 17"x17" trays wont share her tricks of the trade. Ive tried coco mat, baby blanket, lava rock, perlite and peat. plus Im certified organic, which makes it harder. I am open to any sugestens

Have you tried the cropking website? It shows how they grow grass for cattle, You can make your own system. We are working on our system to grow grass for our goats.
